Descripción: When I want to know wether some food is good or bad, I do have a personal method: the "hurgh" test. I just show it to my wife, then, if she says "hurgh it's fat", then, is the test positive and can be sure it is very good and I'll love it all :-) The Gendarme ("Policeman" in english), is a traditional Alsacian smoked saussage made with beef and pork. The test had a very good positive predictive value. Taken in a Christmas market at Colmar, Haut-Rhin, Alsace, France, December 2008
