Descripción: A plate of som tam Lao (Thai script: ส้มตําลาว). The name is sometimes shortened to just tam Lao. This version of green papaya salad will contain fermented fish (pla ra or padaek), chillies, pickled rice paddy crab, lime, yardlong beans, tomato, sugar, Thai aubergine, and shredded green papaya. This particular version also contains tamarind juice for added "smoothness" and makok (the fruit of the Spondias mombin of which the large seed is easily recognisable on the right hand side of the dish).
