Herkömmliche Kartoffeln produzieren ein Stärkegemisch aus Amylopektin und Amylose. In vielen technischen Anwendungen der Papier-, Garn- oder Klebstoffindustrie ist reines Amylopektin vorteilhaft, weil es nicht geliert.
